It takes a lot of prep time but it is soooo worth it in the end! My favorite soup by far! • Melt coconut oil in large sauté pan or soup pot over medium heat. When oil is hot, add onions and sauté 3 min. Add red curry paste, red pepper flakes, ginger, and garlic; sauté for another 3 min. Add squash, carrots, sweet potato and chicken stock. Season with salt and pepper. Bring to a boil, cover and reduce heat to medium. Simmer 15-20 min (until veggies are soft). • Once vegetable are soft, turn off heat and get out a second pot (large enough to hold soup). Pour half into a blender or food processor. Purée until smooth (don’t seal lid completely or it can explode under the heat..vitamix or blendtech work well)then transfer to new pot. Repeat with remaining. • Add coconut milk, fish sauce and basil and cook until heated through. Stir in juice of 1/2 lime. . . . . . . healthy

Oops! Forgot to share this yesterday so in honor of 'Transformation Tuesday'.... I took my Day 1 'BEFORE' pics yesterday and just finishing up a successful Day 2 of the 80 Day program. I wish I could press a Fast Forward button to see what my AFTER will look like but even better see how good I FEEL!! . But there is no cutting corners or magic when you are doing it the right way, so I will put in the work each day. I will make better food choices, I will get my body moving in ways it hasn't been used to, I will work on my mindset to stay positive... and I will lean on the amazing support group when I need the extra accountability or motivation. Some days will be easy and some will be hard.... but each one will be worth it - - because I'm worth it AND so are you!!!!! I am always looking for people who are ready to try something new, whether it be a beginner program or something more advanced. There is seriously something for everyone, even prego mamas!! .
