LOADED LEFTOVERS TOAST PART TWO 🍞🍞 . . . Happy Weekend! I am continuing to clear out my fridge over the weekend to make room for fresh produce. This meal like yesterday’s is a mix of a lot of different foods from the last few days 😌 but slightly different 😉 . . . . WHAT’S ON THE TOAST . . • Seasoned diced tofu with turmeric, oregano, pepper, onion powder, garlic powder, English mustard and a pinch of regular salt. • one massive green chilli diced • two stems of broccollini diced • sunflower seeds • two big handfuls of spinach • leftover homemade sauce from last night (paprika/cashew/sundried tomato) • coriander . . Nice and green today with no salt or smokey flavours. I love that orangey sauce ever since I’ve made the BOSH cannelloni I’m a little obsessed with sun-dried tomato 😌. GIANT RAVIOLI + HOMEMADE SAUCE 😍 . . . Thank you @lavidavegangrocery for supplying me with my favourite pasta 😌. This store is NOT close to where I live, and my lack of preparation in calling ahead means it’s a gamble whether the pasta is there when I go 😅. These ravioli are MASSIVE, packed with spinach, tofu and leek 🙌🏻 . . Creamy Sauce 🍃🧀 . • cup of cashews, soaked and pulverised . • dash oil from sundried tomatoes + quite a lot of sundried tomatoes . • ground paprika • chilli flakes • garlic (2 cloves plus garlic powder) • water (to get consistency right) • pinch of salt . . No measurements and trial and error as usual - but I love this sauce 😍 . . Simple side of leftover fridge foraged veggies. To plate this meal I started with wilted spinach topped with thinly diced asparagus and cherry tomatoes (pan fried in chilli oil and garlic). I oven roasted a red capsicum I found (first time and definitely not the last 🤤) and threw that on. Finally the main asparagus stalky bits (technical I know), the PASTA and sauce. Plus chilli flakes. . . More sauce added post photo, and as usually - a new thing I seem to have going at the moment is a more incriminating 3rd photo (of close up condiment chaos). . . Happy Saturday beautiful people. This is my favourite little to no effort meal for sick or lazy days. Of course the ultimate in laziness would be to simply buy a sauce alongside the pasta at la vida and boom - there’s your meal. . . I still maintain this is a great takeaway alternative as it takes less time to cook than to order and receive a more expensive takeaway pizza 😉. This meal was made with that goal in mind and is actually a mix of a lot of different foods from the last few days 😌 . . . . . WHAT’S ON THE TOAST . . • Seasoned diced tofu with turmeric, black salt, pepper, salt, garlic powder, English mustard, liquid smoke and a dash of chilli powder. • purple cabbage (left over, was originally oven roasted) • one massive green chilli diced • broccollini diced • bok choy leaves diced • two big handfuls of spinach • leftover homemade sauce from enchiladas (avo/lime/cashew/coriander) . . My throat may be too sore to eat this one (currently drinking tea!) but I LOVE making meals like this. I plan on nourishing my body today despite this being my husband’s breakfast (before you say lucky husband, please note I haven’t been the most chilled out sick patient... it’s actually me who’s lucky 😉) . . I plan to eat a lot of cold fruits and also try convince M that going to La Vida to buy whoopie pies is a well thought out plan 😉. VEGAN ENCHILADAS 🌯🌯 Recipe from @ohsheglows (on the website) 🌱🌶🥑 . . Disclaimer - it tastes better than it looks (my photography tonight totally captures my current state 😂😂😂) . I cooked this recipe for a second time and want to say that although it reads long its super straightforward (even with me cooking extremely unwell!). The only real prep is soaking a handful of nuts a few hours before you make it, and steaming some sweet potato👌🏻If I can make it (and especially in the state I’m in tonight) - I truly believe that majority of other people can too! 😉 . . I love this recipe. It doesn’t use any form of vegan cheese and it omits lentils which my husband can’t eat! I did use a store bought salsa as I just needed to make things easier on myself tonight. . . The sauce was about 2-3 mins in the NutriBullet - and my GOSH it’s so creamy. My tastebuds are completely shot so I pretty much doubled the spices and garlic to taste it haha 😂 . . Happy Friyay lovely people 💛 My health may be poor but I’m focusing on the things in my control - self care and work I can do from home. HOW TO MAKE LEFTOVERS LOOK NICE | Starring; Creamy Potato Salad 🥔🥔 . . . This potato salad was made a little while ago, and whilst it’s ok for work lunches - if you’re at home (🙋🏻‍♀️) it looks a little... flat. I’ll quickly sum up what’s in it before going into what I did! . . . In the salad; potatoes (boiled until soft), vegan dressing*, parsley, spinach leaves, carrot, cabbage, cucumber, sun-dried tomatoes, crispy tofu (can omit) & chilli (also can omit). . . . DRESSING - water, 5 sun dried tomatoes, bit of the oil from the jar, 1-ish or more cups of cashews (pre soaked), tsp or two of English mustard, paprika, salt and garlic powder. Blitz together. Adjust as needed - there is no wrong way to make this! . . . Once I took it out of the container - the first thing to did was rejuvenate it. That meant adding something fresh (I had coriander available), anything works. I then sprinkled on chilli flakes and pepper. . . . Even though it has a (kick-ass homemade) dressing, the potatoes had absorbed it all so I quickly mixed a tablespoon of pre bought vegan mayo with a bit of mustard. The ingredients of both are already in the salad so it didn’t ruin the flavour. . . . That’s it 😌 good early afternoon lighting helps but it certainly looks better than in the container 😉. Acts of nourishment are important, especially on sick days. . . . Just taking time to plate your food, treating yourself visually to a nice looking meal can be a mood booster. Sometimes it’s the little gestures that mean the most 😌 . . . Happy Thursday everyone 😌😌 xx . . . . . .

BURRITO (IN A BOWL) TIME - THE LAZY DINNER EDITION 🌱🌶🥑🌱 . . What do you cook when you have some weird flu/respiratory thing going on? For me - it’s got to be light, fresh and easy. Emphasis on the EASY 🙌🏻 . . If I wasn’t unwell - I could do my own beans, sauce and guacamole. But this is a quick dinner night! 😉 no shame at all in vegan tins or jars of things ✌🏻 . . . TO MAKE • white rice with a squeeze of lime • old El Paso refried beans • diced fresh tomato • chilli • coriander • lettuce • avocado • @byronbaychillico green jalapeño chilli sauce (Woolworths 👌🏻) . . Throw into bowl or into tortilla 😉 Thats it! . . I’m really enjoying learning new recipes and spending time cooking, but nights like these are for rest and not creating havoc in the kitchen (🙋🏻‍♀️very messy cook here) . . OH! And here’s the wonder drink that is getting me through sore throat city 🤒🔥 I found it on a few different health thread/forums/Facebook threads; . + mug of hot water, 1tbs apple cider vinegar, 1tbs lemon juice, 1tsp (I added more) of turmeric and pinch of cayenne pepper —> add maple syrup to taste (I added A LOT) . This works SO well! 🙌🏻 . . What is your laziest go-to meal for days you’ve reached your limit? I’d be interested to get some new ideas! 😌 x . . . . . . . . . . . . . .

SIMPLE VEGAN LUNCHBOX FOR WORK (OR IN THIS CASE AT HOME) 🌱🌱🌱 . . . This is a vegan work day lunchbox made for my husband who eats breakfast and lunch at work. He’s off sick today and has also gotten me sick too. Thanks husband 🙃 . . Breakfast - overnight oats. Oats, passion fruit pulp and chia seeds soaked overnight in almond milk. Topped this morning with frozen blueberries, passionfruit and some seeds. Lunch - Leftovers! This is a repost pic, but he does have potato salad. The one I made is a few posts back and is more epic than this one! Snacks - water and herbal teas (not pictured) . . Most accurate repost - the potato salad may be missing chilli and crispy tofu but it’s close! Potato salads are my go to meal to make in bulk. Cheap and no effort (once you soften the potatoes) 💛💛 . . Not sure what I’ll do for food for the rest of the week but I don’t see there being a lot of effort 😉 I’m doing two more in store, free cheese sample events this Saturday for @noshingnaturally and I need to get my voice back! 🤒 Please throw any home remedies at me folks and I’ll try them all! xx . . . . . . . . . . . . .

BAKED TOFU w/ADDICTIVE STICKY SAUCE 🙌🏻🥜🌶 . . This sauce 😍😍😍 (million more heart eyes!) A new jar of peanut butter meant I was absolutely making this! PS thanks for the tofu cravings @innerpickle_ + @plantifullybased 👋🏻 haha! . . Here’s how I did it ⬇️⬇️⬇️ . . I pressed my tofu between paper towels and heavy books to get it as dry as possible. After leaving it for a while, I cut the tofu block into rectangles putting it in the oven to bake. I browned both sides before taking it out. . . Whilst the tofu was baking I seasoned the bokchoy (garlic, salt, chilli oil) and it went into the oven to get crispy 🤤. The cabbage I stared at for a while (does anyone out there have a good recipe??) before slicing thick rings and laying the disks in a baking dish. I drizzled on tamari and garlic powder then it went in the oven as well 👌🏻 . . For the sauce I mixed together; tamari, sriracha sauce, peanut butter, brown sugar, sesame oil and sesame seeds. All quantities to taste, with extra sesame seeds added at the end. The sauce is satay like but with the sweet/salty balance from the tamari/sugar. The kick of sriracha at the end = 😍. I heated up the sauce and dipped the tofu in, serving it with more sesame seeds. Oh and the meal was served on rice (brown for M and white for me)👌🏻 . . This sauce/tofu combination is still my favourite. It doesn’t take long to make and you can get this dish even cheaper by buying veggies of any kind (working to a budget). . . So glad I was influenced to cook tofu tonight - it’s so delicious! I spent the afternoon talking cakes and I’m so inspired to keep coming up with good ideas and a game plan for Feb 😌 I hope you all had a lovely Tuesday! xx . . . . . . . . . . . . .

MY ADDICTION - VEGAN NACHOS 🌱🌶🥑🌱 . . . Biocheese under layers - Sheese on top, that’s right it’s double cheese night ✌🏻🧀🧀 . . I layer beans (pinto, kidney & black) cooked in spices (chilli, paprika etc) with biocheese, tomato salsa (homemade) and white corn chips. After it's warmed in the oven (and the cheese melts), I top with fresh avocado with lime, coriander and diced chilli 🥑🌶 . . I keep some spare white corn chips on hand so I can scoop up some of the mixture at the end 😍😍 all these ingredients I can get at my local Woolworths/Coles! . . . . ZERO regrets making this, I always crave it. It’s lucky my husband likes snacking on this cold the next day as we never get even half way through this dish as I tend to cook for 6 😅. . . Official work countdown at 3 weeks tomorrow 🎉 It’s a new challenge for me, after spending 2017 working half days to go to full days, extra work at home and a few vegan cheese events here and there! 😅 . . After having the most eclectic work/career history (it is ridiculously diverse 😂) I’m excited to take the little things I’ve learnt from each and throw it into this new adventure 💛💛 . . Happy Monday! CREAMY POTATO SALAD w/ H/MADE SAUCE - SO DARN EASY 🥗 . . . This potato salad is possibly the best one I’ve made yet! Unfortunately it is also one of the least pretty looking ones (**EDIT - don’t take photos in the dark folks.) 😂 . I made a little dressing too but you can totally swap it out for a store bought one (goodness knows I have a lot of the time! 😉) . . In the salad; potatoes (boiled until soft), vegan dressing*, fresh parsley, spinach leaves, carrot, cabbage, cucumber, sun-dried tomatoes, crispy tofu (can omit) and chilli (also can omit). . . How much effort you put in is absolutely up to you! . . TOFU - pressed then cut into thin rectangle strips, salt and peppered, dipped in flour and fried in oil until crispy. . DRESSING - water, 5 sun dried tomatoes, bit of the oil from the jar, 1-ish or more cups of cashews (pre soaked), tsp or two of English mustard, paprika, salt and garlic powder. Adjust as needed - there is no wrong way to make this! . . Whilst it’s not the most potato salady weather day, it’s a good meal to make to have on standby for the week ahead. It’s so filling and is a good way to use up fridge veggies too 😌 I’ve said it before, but my favourite salads are 80% potato 😉😉 . . . . . . . . . . . . . . . . . . . . . .

TACO BRUNCH 🌮🌮 (LEFTOVERS ARE THE BEST) . . . Bit of a late start to the day - and what better start to a slower day than a midday feed that uses up the leftovers from a fun social night 😌 . . Jackfruit was drained then shredded (mashing it with a fork until it flaked into the texture you see) I seasoned it with smoked paprika, cumin and other spices - rubbing the spices into the plain jackfruit. I fried up some diced onion and liquid smoke adding Jackfruit and chilli oil when the onion had browned. . . The pineapple salsa was made three ways last night to account for dietary requirements and preferences 😂 but the main one was; . . Diced fresh and tin pineapple, diced red onion, coriander and diced jalapeño. I took inspiration from @plantifullybased and the mango salsa that was used on her tacos. That salsa has really inspired me to be more creative turning citrus/fresh fruits into dressings and salsas 😌🍍 . . . Construction = purple cabbage and avocado base. The fresh pineapple salsa, Jackfruit (plus leftover black beans) then a creamy coriander sauce with a garnish of fresh coriander 😌. The homemade but simple sauce is lime, avocado, garlic powder, chilli flakes and salt. . . . Tonight I’m headed to Perth’s C restaurant for family birthday celebrations. It’s my first time eating in a revolving restaurant (!!) and I’m excited that they have a separate vegan menu which sounds so incredible! 😍 Once upon a time, new restaurants and an unknown menu would have terrified me. . . . These days my focus is on good company, excitement to try new flavours and new experiences 💛 . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
